The perfect soup dumpling
A while ago, I talked about my experience of eating a notable Shanghai delicacy called xiao long bao. Here’s a video of Andrea Nguyen, chef and author of Asian Dumplings, as she talks about the process of making this dish and what she considers the perfect xiao long bao at Shanghai Dumpling King. Firstly, I love Andrea–her Into the Vietnamese Kitchen was an instant classic. Unsurprisingly, her new Asian Dumplings cookbook has sold out at the museum store.
Secondly, this makes me question my dietary choices. If I make good on my dream of making a vegetarian version of xiao long bao, I’ll document it here.

I think that the cafe should feature more Shanghai specialties. I also volunteer to do taste tests – I’m being very altruistic and helpful, aren’t I?
